Rathi’s Special Beef Kondattam

Today we are going to prepare Special Beef Kondattam. For this i am using the Best Meat Masala Powder in Kerela .Which is the best meat masala available in the market.It is very spicy and this meat masala is perfect for Beef recipes. You can also use it with Chicken, Pork,Mutton . It is important to use the right blend of spices for each dish .

Rathi's Special Beef Kondattam

Ingredients:

Beef – 500g

Fried kondattam chillie -15

Egg – 1

Rice Flour – 1Tbsp

Refined Flour – 1Tbsp

Ginger Garlic paste – 1Tbsp

Red chilies powder – 1 Tbsp

Turmeric powder – 1 Tbsp

Cumin powder – 1 Tbsp

Coriander powder – ½ Tbsp

Garam Masala – Tbsp

Fennel powder – 1 Tbsp

Dried Red chillie crushed – 1 Tbsp

Lemon – 1

Shallots – 10

Green chillie – 2

Curry leaves,Salt, Oil according to the need

Preparation :

Step 1 – Rub ginger-garlic paste, red chilies powder, turmeric powder and salt into the finely chopped beef

Step 2- Add a bit of water and pressure-cook the beef for up to three whistles…

Step 3 – Add refined flour, rice flour, cumin powder, garam masala powder, fennel

powder, salt, crushed dry red chilies, egg and fried and crushed kondattam

Step 4 – Mix thoroughly and fry the meat

Step 5 – Saute finely chopped shallots, split green chillies and curry leaves

Step 6 – Mix in the fried beef along with fried kondattam then squeeze a bit of lemon extract at the top , now it’s ready your Rathi’s Special Beef Kondattam

Rathi’s Special Mutton Chukka

Rathi’s Mutton chukka

Ingredients:

To Marinate :-

450 grams Mutton

1/4 Tbsp Turmeric powder

1/2 TbspGinger Garlic paste

1 Tbsp Red chilly powder

Salt according to need

To Pressure Cook :

2 Tbspred small onion finely chopped

5 pods Garlic finely chopped

1/2 Tbsp Turmeric powder

3 Tbsp Coriander Powder

1 Tbsp Red chilly powder

Salt according to need

2 Cup of water

To Grind:

2 Tbsp Grated Coconut

1 Tbsp Poppy Seed

1 Tbsp Fennel seed

For Sauteing :

1 inch Cinnamon

1 Tbsp Fennel seed

1 Bay leaf

1 Spring curry leaf

1 Tomato finely chopped

1 Tbsp Ginger Garlic paste

1 Tbsp Lemon Juice

3 Tbsp Oil

1 Tbsp Mutton Masala Powder

Preparation:

Step 1:- Wash and cut mutton in to small pieces, marinate for at least 30 minutes

Step 2: In pressure cooker, heat 1-2 tbsp of oil, add the marinated mutton and saute for couple of minutes

Step 3: Add all the ingredients given in To Pressure cooker and everything mix well, close the cooker and cook for about 8-10 minutes after couple of whistle then reduce the fire to medium and then switch of the flame and let it cool naturally. Alternatively, mutton can be cooked in a regular pan; In a pan; cover and cook the meat with 1 cup of hot water for about 20 to 30 minutes or till the mutton is soft. This water will help cook the meat as well as ensure that it does not get charred. At the end of the cooking, there should be at least 1/2 cup of liquid remaining in the mutton

Step 4: then Grind the items for grinding

Step 5: Heat 2 tbsp of oil in a sauce pan, saute with clove,cinnamon,bay leaf,fennel seed and some curry leaves for a minute. Add ginger garlic paste, chopped onion, chopped tomatoes till it turns to translucent.

Step 6: Add the grounded masala and saute well

Step 7: Open the cooker and separate the mutton pieces with a slotted spoon.

Step 8:Add the reserve gravy left into the Span and now add mutton masala powder or red chilli powder, mix well and adjust the salt.

Step 9: Keep stirring the liquid on high heat till most of the water evaporates becomes thick

Step 10: Add the cooked mutton pieces and mix well and keep sauteing till the mutton pieces are well coated with masala and becomes dry and starts taking a light dark brown color. Stir in the remaining curry leaves and remove from the heat.

Step 11: Add the lemon juice and mix well and immediately remove from the stove.Now it become dark color .Now it’s ready your Rathi’s Special Mutton Chukka

Rathi’s Special Beef Dry Fry

Rathi’s Special BDF

INGREDIENTS:-

Beef Big Piece – 500 grams

Tumeric Powder- 1/2 Tbsp

Chilly Powder-2Tbsp

Garam Masala-1Tbsp

Coriander Powder-1Tbsp

Ginger Garlic paste-3Tbsp

Salt-1Tbsp

Oil-2Tbsp

Garlic-3 Cloves

Curry Leaves: Accounting to need

Lemon Juice

Preparation:-

Step 1: Cut the beef into small pieces. Wash it and press it well so as to remove water from it.

Step 2: Mix all ingredients to marinate. Make it into a good paste. Add cut beef pieces and mix well

Step 3: Pressure cook marinated beef till beef is cooked well.

Step 4:If stock is there, cook without putting the lid till beef is almost 80% dry.

Step 5: Heat oil in a pan and add curry leaves and fry till its crisp and keep it aside .

Step 6: Add crushed small onion and crushed garlic pods and saute till it becomes soft. And cooked beef and mix well.

Step 7: Cook in medium flame and keep stirring in between and you will notice beef starts to become dry.

Step 8: Continue cooking and beef will slowly start becoming brown. Add little oil if masala is sticking to the pan and then reduce the flame .

Step 9: Cook till beef is completely dry and becomes dark brown in color.Add the fried curry leaves on the top. Now it’s ready your Rathi’s Beef Dry Fry

A special delicious Beef fry,

Ingredients

  • 1 kg Beef
  • 200 grams Onion – Pureed
  • 20 grams Ginger Garlic Paste
  • 8 Tbsp Coconut Oil 
  • 2 Tbsp Vinegar
  • 2 Tsp Salt
  • 1 Tsp Black Pepper 
  • 1/2 Tsp Tumeric 
  • 1 Tsp Coriander Powder 
  • 1/2 Tsp Garam Masla Powder 
  •  Curry Leaves a handful

How to Prepare:-

Step 1:- Chop the beef into small pieces and marinate with salt, pepper, ginger garlic paste, onions, tumeric, coriander powder, garam masala powder and vinegar. Let it marinate for 30 minutes.

Step 2:- Add the beef into a pressure cooker with about 1/2 cup of water and cook for 20 minutes on a low flame. You can also slow cook it in a saucepan for about 40 minutes or till the beef is tender.

Step 3:- Once done remove the beef with a slotted spoon. Strain the liquid and reserve for later use. Then the masala in the sieve you add to the beef

Step 4 :- Heat the coconut oil in a pan and deep fry the curry leaves. Add the beef to that and cook on a medium heat for about 15 minutes

Step 5:- Keep stirring the beef so that it doesn’t burn but you want all the spices to cook well and the beef almost black then turnoff heat now ready your Rathi’s Special
